Edward loves to see his trainees develop practical skills to assist them in their
management positions. His trainees see him not just a teacher, but as a mentor and life coach.
From training hospitality at a gold mine in Irian Jaya to managing an elite hotel for Exxon in
Malaysia to opening a fusion restaurant in the Blue Mountains, Edward’s career has taken him
around the world and back again. But he confidently assigns Australia the best country in
the world.

Nicole comes to you with a wealth of hospitality and restaurant industry experience. A native of
Canberra, she has worked as a publican in London, a restaurant manager in Bateman’s Bay
and a café owner/operator right here in Canberra which includes her being a baker extraordinaire.
The best macarons in town! An encourager at heart, Nicole is a natural born trainer – in 2020
she won ACT’s Trainer of the Year Award.

Wendy Chesworth

Health Services Assistance

“I so enjoy helping my students prepare for a career they didn’t believe they could achieve.”

Wendy is a physiotherapist having worked across public and private hospitals and a
private sleep practice. This has included work in in Sydney, London and Canberra. She has
taught in graduate physiotherapy and medicine courses at university. She also holds
a doctorate in Sleep Medicine. Wendy is using her clinical and teaching experience to run the
Certificate III in Health Services Assistance course. Some of the courses are in partnership
with both the Education Directorate and ACT Health.

Jeff Piper

“I went from mashed potatoes and overcooked frozen peas as a kid to creating the best Thai Restaurant in Canberra.”

No stranger to apprenticeships, Jeff began his chef apprenticeship right here in Canberra at
CIT at the ripe age of 16. Jeff is an experienced chef who is the founder of two different award
winning restaurants in Canberra. As an expert in Thai cuisine he has lead food tours to Asia and
presently boasts an online Thai food store.

Lynn Benedix

Skills for Work and Vocational Pathways, Hospitality

“I especially enjoy encouraging high school and college students, helping them to discover their potential and their future path in life.”

Fluent in Chinese, and conversational ability in French and Spanish, Lynn has spent many years
teaching English to 2nd language learners in Asia, the United States and now Australia.
Additionally, she teaches practical life skills and foundational work skills to young people. She
has taught in both the public and private sector. As a curriculum writer, Lynn enjoys making
learning interesting, creative and fun.
